Gryphons are an Endangered Species, but you won't find them on the Government's list -- they don't list so-called "mythological" creatures.

I don't know whether Gryphons are mythological, but they are certainly rare. I don't know of any reported sightings in the last several centuries.

As far as the cooking of Griffins is concerned, I don't know much about them as a species, but I can tell you that it would be illegal in the U.S. for one sub-species -- the Merv Griffin. To quote a great sage (Pogo Possum), "It is illegal to buy, sell, trade, give away, or ALLOW TO BE CONSUMED ON THE PREMISES (emphasis mine) anyone who is a citizen of these here United States."
