It isn't the shortening of the dialogue that bothers me...that is clearly neccesary: my puritanical streak only goes so far! But, what they do keep in the film should be verbatim as often as possible. You simple aren't going to improve upon Aragorn's challenge to Boromir at the Council of Elrond: "Strider I am to one fat man who lives within a day's march of foes that would freeze his heart or lay his little town in ruin if he were not guarded ceaselessly." That is the kind of language that I'm afraid will be cut in favor of the lowest common denominator.
