Replace the ligno-cellulose of their bodies with silicates and hey presto! you get a stone troll. This theory sounds about the best I've heard and is close to what I always thought may be the case with trolls. It is reinforced further as Tolkien says that trolls were made in mockery of ents just as orcs were made in mockery of elves. It makes sense that what was created for good can be turned to evil with sorcery.
