The Road to Middle Earth by Tom Shippey, alternatively try Defending Middle Earth by Patrick Currey. Both are insightful and accurate, though neither would serve as a general guide to Middle Earth in terms of say an encyclopedia type thing, they tend to concentrate more on the ideas behind the novels.
