I realize that he would have to attend to the tricky things personally but I wonder if he simply showed his more talented slaves how to and made them do the work. Biggest example is the Barad-dur. Did he build it solely by himself or did he use his rather large collection of "volunteers" to do much of the work?

I don't think Sauron would do that much smithy work himself, unless it was something special.
As to Barad-dur, the impression I have is that Sauron used his inate power to raise, or make, Barad-dur. When the One Ring was destroyed, Barad-dur was also destroyed. This would indicate that Barad-dur was not a mere physical construct, but was linked to Sauron's power.
