well, i wouldn't be surprised if Morgoth had something like the Nazgūl steeds..with all his other beasts, they might be kind of low on the list (not as important, therefore not mentioned). Ok, brace yourselves...more idiotic theories coming up: perhaps these things were dragon offspring, like Shelob or the spiders of Mirkwood were to Ungoliantė: the same type of thing but on a smaller scale. Of course, i'm not reading from Tolkien right now (and i have some faint recollection of something about the Nazgūl steeds in RotK), so i'm probably wrong on this one...if any one can give me a page number, i'd be of more use. On your second point, I really hope you're not talking about the Uruk-Hai, because then you'd have to be smacked on the arse with a copy of The Two Towers. The sturdier orcs, the ones Aragorn/Legolas/Gimli followed were the Uruk-Hai, men-orcs bred by Saruman. (there were some of Sauron's orcs there too, but they were whining and complaining about the sun the whole way) If you're not talking about the Uruk-Hai, the orcs are still orcs. It's not like changing a wolf into a dog, it's more like refining a specific breed: foxhounds will still be foxhounds 100 years down the line, they might just be better foxhounds. Again..a page reference would help me, because (a)i no longer trust any secondary Tolkien resourses and (b) i don't have time to look through everything in LotR with school and all now. (oooh, bad excuses!) oh well............
