Here are my crude, unresearched estimates for some of the battles: Dagorlad: I agree with the above. Pelennor Fields: 18000 haradrim, as many various easterlings, orcs at least as many as men, = 72000. I think of these numbers at the point where it is said "the Rohirrim were thrice outnumbered by the Haradrim alone, so you have to add the ones they'd swept off the northern half of the plain, maybe 10000. that makes it 82000, and I'll round it up to 100000 for a nice round figure.

Helm's Deep: The 10000 Pippin counted coming from Isengard, plus whatever forces Saruman already had near the Fords, I'd say 13-14 thousands all told. 1500-2000 defenders.

Five Armies: 500 (+13) dwarves, perhaps 1500 Laketowners, 2000-2500 elves =4500. Most of the orcs of the MIsty and Grey Mountains, at least 35000. A couple of thousand Wargs/wolves/both.

Azanulbizar: 15000-20000 dwarves (they had already lost many and I don't think there aver were very many dwarves), about 40000-50000 orcs.

Field of Celebrant: 7000 with Eorl, 20-25 thousand in the army of Gondor, 20000-30000 orcs, 40000-50000 Balchoth. Bywater: I think its quite accurately stated in the book.
